Restoration (for healing and stamina) Alteration (for the Magic resistance perks) Lots of health, a fair amount of Stamina and bare bones Magicka for healing.

Well left click you swing your sword, dagger, axe, ect. and right click holds up your shield. All you do is hold up your shield when someone is attacking you and swing your weapon to fight back, sorry it's not rocket science. Block their attacks or bash them with your shield to stagger them and then have at it until they regain their balance.

Although Nords get a bonus to One handed, block, and smithing. They also get a bonus to my favorite armor type, light. Beef, stew, Horner, stew, venison stew, and vegetable soup will provide you with all the stamina you'll ever need for shield bashing and power attacks as you only need 1 stamina to do this. One handed perks are very limited though. The only one handed perks you really need are the Bladesman and standing power attack one. Sword and Shield is more dangerous than 2H in the long run though. A normal shield bash can stun a dragon quite a bit, power bashing can disarm even Druagr Deathlords, and Shield Charging knocks over the fleeing.

It's a fun weapon skill. The main difference is that 2H is like going 70% offense and 30% defense, while Sword/Shield is the opposite. There are some good 1H builds that do respectable damage, but they just don't keep up with 2H in that regard--especially if you're an Orc.
